Ingredients:
For the turkey burger
- 1 pound ground turkey
- 1 tbsp rapeseed oil for frying
- 1/4 cup light mayonnaise
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Sliced tomato for topping
- Lettuce, for wrapping
For the smashed avocado
- 2 avocados, pitted
- 1/3 cup coriander, finely chopped
- 1/4 cup red onion, minced
- 1 tbsp lemon or lime juice
- Salt and pepper to taste
For the spicy mayo
- 1/4 cup light mayonnaise
- 1 tbsp sriracha
- 1 tbsp low sugar ketchup
- 1 tbsp honey
Instructions:
- In a large bowl, add ground turkey, mayo, and seasonings. Mix gently until well incorporated. Make 4-inch diameter patties.
- Heat oil in a large skillet over medium-high heat. Cook patties for 4-5 minutes per side until cooked through and lightly browned.
- Serve with smashed avocado and tomato slices wrapped in lettuce, with Spicy Mayo dipping sauce on the side.
- For the smashed avocado, mash all the ingredients together in a bowl until fully incorporated.
- For the spicy mayo, mix together in a bowl and set aside.
